Whole30 Meal Plan Round 2: Week Two

How is Whole30 week one going?  Can you believe it is time for week 2!  This Whole30 Meal Plan follows a similar pattern but has some fun additions!  I love trolling Pinterest boards as much as the next cooking momma so we have some fun inclusions from around the webs.

Again, this week is simple breakfasts and lunches. It just makes staying on track easier.  You’ll get ahead if you use your Sunday prep night to make your sauces, chop raw veggies, and roast enough chicken so that you always have something on hand.  But, it’s all in the plan – so let’s get to it!

I would love for lunch to be my biggest meal of the day, but #merica.  It just doesn’t work out around here.  Lunch needs to be fairly quick or easy to prep and pack, and portable is a big plus. Tuna salad is endlessly adaptable and easy.  Sticking a big scoop on top of an avocado is just a delicious bonus.

To make this a perfect Whole30 meal add a simple salad to up the vegetable content.  If you don’t have avocados or maybe they are past their prime then skip them and put the tuna salad directly on the salad green.  Either way, a fun and easy lunch is in your future!


Tuna Salad Avocado Boats

Serves/ Yield: 6

Prep Time: 5 minutes

Cook/ Assembly Time: 10 minutes

Total Time: 15 minutes

 

Ingredients:

  • 3 – 6 oz. cans wild caught tuna
  • 4 Tbsp. mayonnaise
  • 1 celery rib, diced
  • 1 shallot, diced
  • 1 Tbsp. dried parsley
  • 1 tsp. dried dill weed
  • Dash of garlic powder
  • 1 green onion, diced
  • Salt & Pepper, to taste
  • 3 avocados

Recipe:

Combine all ingredients except avocados.

Slice avocados in half, discard pits. Fill each with a large scoop of tuna salad.  Top with green onions.

Serve with a simple salad.

Whole30 Meal Plan Round 2: Week One

Week One Meal Plan – This week is all about simple, simple, simple.  The breakfasts and lunches are all basically the same to make staying on track easy.  Many dinners can be made in advance or at least partially and none are difficult.

Simple Roast Pork

Simple Roast Pork is a great recipe that follows the K.I.S.S motto. Even though it is not a thirty-minute meal it is a very hands-off recipe with a fast prep time.

If you have a smaller roast (1-2 lbs.) you can add root vegetables to the pan for a one pan dish. Roasted Cardamom Sweet Potatoes are a great accompaniment.


Simple Roast Pork

 

Serves/ Yield: 5-6

Prep Time: 5 minutes

Cook/ Assembly Time: 35 minutes per pound

 

Ingredients:

  • 4 lbs. pork roast, loin, or center cut
  • 4-6 cloves garlic, minced
  • ½ c. apple cider vinegar
  • ½ tsp. dried thyme
  • Salt & Pepper, to taste

Recipe:

Preheat oven to 325 degrees Fahrenheit. Pierce the roast in several places with a fork or skewer.  Sprinkle liberally with salt and pepper. Spread the minced garlic. Rub the seasonings in. Try to get some garlic into the holes. Place the roast fat side up. Combine vinegar and thyme, and pour evenly over the roast. Place in oven, allowing 35 minutes baking time per pound. If the pan juices seem to dry out make more of the vinegar and thyme mixture and use it to baste occasionally. Allow to rest, with a piece of foil placed loosely atop, for 10 minutes before slicing and serving.
