Chinese Chicken Salad

This is so good!
Bonus, it makes a huge amount so it’s great for bringing to a party or eating over many, many days!
Chinese Chicken Salad
Serves/ Yield: 4-6
Prep Time: 15 minutes
Cook/ Assembly Time: 5 minutes
Total Time: 20 minutes
Ingredients:
· 2 bags shredded carrots
· 1 large head of Napa Cabbage, chopped into thin strips
· ½ c. cilantro, chopped
· 2 Tbsp. black sesame seeds
· 2 Tbsp. white sesame seeds
· ½ c. cashews
· 1 roasted chicken, shredded
· ¼ c. coconut aminos
· 1/4 c. white wine vinegar
· 3 Tbsp. ginger, finely minced
· 3 Tbsp. olive oil
· 1 Tbsp. Toasted Sesame Oil
· 1 tsp. spicy chili oil (optional)
· ½ tsp. sea salt
· 5 green onions, chopped – white and green parts
Recipe:
In a small jar with a lid combine coconut aminos, vinegar, ginger, olive oil, sesame oil, chili oil, sea salt, and green onions. Shake to blend.
In a large bowl combine cabbage, carrots, cilantro, sesame seeds, cashews, and chicken. Dress to taste.
Options and Notes: This makes a big salad. And, because of the cabbage, it is good for several days, even when dressed.
