Deconstructed Egg Rolls

Deconstructed Egg Rolls are perfect for when you are getting the mood for takeout. They are faster than delivery and this version is certainly healthier with a lot more flavor!
The hardest part of cooking Asian food is the prep. Generally, if you have your ingredients ready they are pretty fast meals. This one included. So, take shortcuts if you need to. Get the bagged slaw. Sub out dried for fresh spices if need be. It is a simple stir-fry so if it seems like it’s taking too long modify. It will still be delicious!
Deconstructed Egg Rolls

Prep Time: 10 minutes
Cook/ Assembly Time: 10 minutes
Total Time: 20 minutes
Ingredients:
- 2 Tbsp. sesame oil
- 1 lb. ground pork or beef
- 6 c. (1 medium head) finely sliced cabbage or bagged ready-made coleslaw
- 1 c. shredded carrots (omit if using bagged slaw)
- 1 c. mushrooms, sliced
- 1 medium onion, chopped
- 5 cloves garlic, chopped or minced
- 1 Tbsp. fresh ginger, grated or finely chopped
- 1/4 c. coconut aminos, divided
- 1 tsp. anchovy paste or fish sauce
- Juice of one small lime
- 1/4-1/2 tsp. crushed red pepper flakes
- Salt & Pepper, to taste
- Chicken Broth or water, as needed
- Garnish: 2-3 green onions, finely sliced—green parts only, Cilantro, and Toasted Sesame Seeds
Recipe:
In a large bowl whisk together the coconut aminos, anchovy paste or fish sauce, lime juice, and crushed red pepper flakes. Toss with the cabbage and carrots.
In a large deep skillet or Dutch oven, heat 2 Tbsp. of sesame oil over medium heat. Add the onions and sauté until softened. Add the garlic and ginger, stirring until they become fragrant. Then add the pork. Cook until browned and broken into pieces. Add the mushrooms and cabbage and carrots and any marinade that collected in the bottom of the bowl. Cook for around 1 minute, until vegetables start to get limp. If things are sticking add a little chicken broth or water to loosen them up.
Salt and pepper to taste.
Transfer to bowls. Top with cilantro, sesame seeds, and/or green onions
