Grilled Flank Steak

There are a lot of recipes that you can smudge this or that – the marinate time on this grilled flank steak is non-negotiable.  It must marinate for at least three hours.  You will be so happy you did!

Total Time: 8 hours 6 minutes



  • 1-3 lb. flank steak
  • 1/4 cup olive oil
  • 1/2 cup balsamic vinegar
  • 2 Tbsp. fresh ginger, minced
  • 3-5 garlic cloves, minced
  • 2 Tbsp. Dijon Mustard
  • 1 Tbsp. Rosemary leaves, finely chopped
  • 1 Tbsp. dried chopped onion
  • Salt and Pepper, to taste


Create the marinade by combining all the ingredients in a nonmetallic dish or plastic zip-top bag.  Add the steak and thoroughly coat. Refrigerate and marinate overnight if possible, but at least 3-4 hours.


Preheat the grill to high heat. Remove the steak from the marinade and lightly blot away the excess.  Season each side with salt and pepper to taste. Grill to desired doneness, 6-12 minutes total, flipping halfway through.

Let rest for five minutes. Then thinly slice against the grain and serve.
