Put an Egg on It

Perhaps you manage to have leftovers, like Spicy Sweet Potato Fries. It could happen. What then to do with the leftovers? Put an egg on it.
It’s basically my answer for making everything delicious and appropriate for breakfast. A good runny egg will solve many problems. Like:
“What’s for breakfast?”
“How can I eat a vegetable for breakfast?”
“What to do with these leftovers?”
“I wonder if a runny egg would be good on __________?” (Yes, the answer is always yes)
“How can I practice making fried eggs?”
If that last one is really true (I’m not going to say it has taken me an embarrassingly long time to perfect a non-over or undercooked fried egg) then just keep trying. There are a million theories and posts about the perfect fried egg. Give some a try, but in the end, you need to figure out your tools and your heat to get together and make a beautiful fried egg baby. The game changer for me was bacon grease. It’s awesomely awesome to cook friend eggs in. Try it. You’ll like it.
