Simple Roast Pork

Simple Roast Pork is a great recipe that follows the K.I.S.S motto. Even though it is not a thirty-minute meal it is a very hands-off recipe with a fast prep time.
If you have a smaller roast (1-2 lbs.) you can add root vegetables to the pan for a one pan dish. Roasted Cardamom Sweet Potatoes are a great accompaniment.
Simple Roast Pork
Serves/ Yield: 5-6
Prep Time: 5 minutes
Cook/ Assembly Time: 35 minutes per pound
Ingredients:
- 4 lbs. pork roast, loin, or center cut
- 4-6 cloves garlic, minced
- ½ c. apple cider vinegar
- ½ tsp. dried thyme
- Salt & Pepper, to taste
Recipe:
Preheat oven to 325 degrees Fahrenheit. Pierce the roast in several places with a fork or skewer. Sprinkle liberally with salt and pepper. Spread the minced garlic. Rub the seasonings in. Try to get some garlic into the holes. Place the roast fat side up. Combine vinegar and thyme, and pour evenly over the roast. Place in oven, allowing 35 minutes baking time per pound. If the pan juices seem to dry out make more of the vinegar and thyme mixture and use it to baste occasionally. Allow to rest, with a piece of foil placed loosely atop, for 10 minutes before slicing and serving.
